I have a cat the refuses to poop in the litter box when she is “put to bed”. She will use the box any other time of day, its just for that span of 8 hours where she’s shut in her room that she does not use the box properly. We’ve done the 2 box thing.

Sounds to me like she’s getting revenge for being shut in her room. Seriously, cats “pout” and try to get even.
